Spring 2025 Lamb
This year we are offering two butcher dates for lamb, first week of April and first week of June. Around one dozen lambs are available for each date. We do expect to sell out!

We are simplifying the process this year- instead of custom order forms all the lambs will be processed into the same cuts and the price will be based on the final weight of the finished cuts, or "freezer weight", same as the grocery store.

One whole lamb will include:

Two whole leg roasts - bone in, sirlion on, shank off (3-4 lbs each)

Two rack roasts (1.5-2lbs each)

One shoulder roast - bone in (2-3 lbs)

Arm and blade chops - 1" thick (2-3 lbs)

Loin chops - 1" thick, (3-4 lbs)

Neck chops- 1.5" thick (1-2 lbs)

Four shanks (3-4 lbs)

Riblets - one package of 16

Stew/Kabob (1-2 lbs)

Ground lamb (4-6 lbs)

Weights are approximate of course and will vary depending on the lamb.
Total freezer weight I expect to be between 25 lbs for the small ones and 40 lbs or a little more for the big ones. By volume that's about one to one-and-a-half brown paper grocery sacks of freezer space required. Like last year cuts will be wrapped in plastic and then in freezer paper.
The cost this year is $14 per pound. A whole lamb will cost between $350-$560 total; there is no additional butcher or processing fee.
We don't sell half or quarter lambs, or individual cuts. If a whole lamb is too much consider splitting an order with a friend! But you might want to stock up as we will have NO LAMBS for sale in 2026! We did not breed last year in order to reconfigure our flock, but lamb lasts for several years in a deep freeze.

Lamb will be ready for pickup from the farm during the second week of April and June. Local delivery is available for a small fee.

A $50 deposit will be required for first time buyers. Balance will be due at time of pickup. Cash or check only.

We got 12 lambs out the door in the April butchering session and they turned out great. The meat has been tender and mild flavored and we have received very positive feedback so far. Thank you to everyone who ordered one! For the April date we only plan to send out 6-8, and about half are already purchased, if you are interested in a lamb yet this spring give us a call or email soon!​

Spring 2025 Beef
One steer is sold! That means we only have one left to go. The cattle will be butchered at the end of June and ready for pickup from the butcher in Amery, WI during the first week of July.

The cattle are run differently than the lambs, since these are slaughtered "on farm," they can only be sold under the USDA "Custom exempt processing" rules. This exemption allows meat which is not killed in an inspected slaughter facility to be processed and returned to the animal owner, but doesn't allow it to be sold. In fact, the packages will be marked "not for resale!". Practically speaking, this means custom animals can't be split amongst different buyers (no halves or quarters or individual cuts/packages), and the animal owner has to be the one that picks up the meat from the butcher shop. Technically, you purchase the animal "on the hoof," or as a live animal! But since its tough to get them to stand on a scale, we still use the hanging weight to calculate the price. The buyer does need to be identified before the animal is slaughtered though.
Despite the limitations, we think on-farm slaughter of our cattle is worth it because its a much lower stress experience for them than going in a trailer to a strange place for the first time. After the carcass leaves the farm it goes to the same butcher shop the lambs did and is treated in every way like inspected meat, it just can't be called that because it didn't go through an inspected slaughter facility. If you are new to buying meat in this way feel free to get in touch with us and we will be more than happy to answer any of your questions. Of course, after you leave the butcher shop with your beef, no one is checking on you and you are able to do with it as you please, and people commonly will split a whole steer amongst member of their family.

On the good side, being custom slaughter it is also custom butchered to your specifications! You can work directly with Cain's Processing to have it made into the type of steaks and roasts that you prefer. If you are not sure the best way to have your steer processed, we are happy to advise you or you can use Cain's standard cuts.
Beef this year will be sold at $4.00 per pound hanging weight, PLUS butcher fees which are paid directly to Cain's processing when you pick up the meat. Processing this year is $200, plus $1.00 per pound hanging weight. Our cattle usually have a hanging weight between 550-650, so you can expect a whole animal to cost around $3,200 (600*$4+600*$1+$200, for a 600 lb animal). This nominal 600 lb steer would yield about 390 lbs in the freezer. Of that, about half will be in ground beef, a quarter will be ribs and roasts, and a quarter will be steaks, varying a little bit according to your preferences.

A $150 deposit will be required for first time buyers. The remainder can be paid with cash or check prior to pickup, and you'll pay the processing fees directly to the butcher when you pick it up.

Sheep Wool
We have lots! Icelandic sheep are known for their high quality, long-staple wool that is excellent for spinning into yarn. We shear once a year in the spring and sell the raw fleece for $10 each. We are not spinners and are not able to describe color and quality in specific detail, but you are welcome to come take look for yourself. We have a variety of white and off-white, and a few black fleeces

Alpaca Wool
We have one Siri alpaca with cream-colored fiber and one Huacaya that is cinnamon-colored. Just as for the sheep's wool we are not qualified to speak intelligently about its quality, but its awfully soft and we have been told its, "nice". A whole alpaca fleece is $30.
